Bites of Charleston

Some foods are perfectly happy doing one job. This is not one of them.

Our Sharp Cheddar Bacon Onion Spread and other varieties started with a pretty irresistible combinations: bold sharp cheddar, smoky bacon and savory onion blended together into a rich, creamy cheese spread. Put it in a bowl with crackers and it’s perfectly capable of disappearing all by itself.

But stopping at crackers seems like such a waste. This is the kind of cheese spread that starts inspiring ideas once you have it in the refrigerator.

Start With the Obvious: Put It on a Board

A bowl of Sharp Cheddar Bacon Onion Spread belongs right in the middle of a charcuterie board. Surround it with crisp crackers, toasted baguette slices, pretzels, apple slices and fresh vegetables. Add a few cured meats, olives, pickles and something slightly sweet to balance the sharp, smoky flavors and then stand back. There is a reason cheese spread tends to become the gathering point of a good board.

Now Put It on a Burger

This is where things get interesting. Instead of laying a slice of cheese over a hot burger, add a generous spoonful of cheese spread. The warmth of the burger softens it just enough to become creamy and oozy, while the bacon and onion are already along for the ride. Suddenly the cheeseburger has had quite an upgrade. It works just as beautifully on grilled chicken, a turkey burger or a hot roast beef sandwich.

Grilled Cheese Was Practically Made for It

Bread. Butter. Sharp cheddar. Bacon. Onion. All your favorites. There isn’t much explaining required here. Spread it generously between two pieces of good bread and grill until the outside is golden and crisp and the cheese inside is warm and melting. Add sliced tomato if you’re feeling virtuous. We won’t tell anyone if you’re not. And yes, dipping it into tomato soup is highly encouraged.

Give the Baked Potato a Little Attention

A steaming baked potato with butter is wonderful  and Sharp Cheddar Bacon Onion Spread melting into the middle is considerably better. Add sour cream and green onion and you’ve essentially created a loaded baked potato without having to assemble half a dozen toppings. The same idea works with roasted potatoes, potato skins and even mashed potatoes.

Sandwiches, Wraps and Lunches

Think of the spread as both a condiment and a cheese. Use it instead of sliced cheese or mayonnaise on turkey, roast beef, chicken and vegetable sandwiches. Spread it inside a wrap with lettuce and tomato. Add it to a BLT—which admittedly means putting bacon with more bacon, but we’re having difficulty identifying the problem. Even a simple toasted sandwich becomes considerably less simple.

Chili Night Needs a Spoonful

A bowl of hot chili, a little sour cream and a spoonful of Sharp Cheddar Bacon Onion Spread melting over the top? Absolutely. As it warms, the cheese begins working its way into the chili while the bacon and onion add another layer of flavor. Serve some crackers or cornbread alongside and dinner is handled.

And Then There’s Breakfast

This may be where the leftovers become dangerous. Spread it over a toasted bagel or English muffin. Tuck some into an omelet. Spoon it over scrambled eggs. Add it to a breakfast sandwich with egg and sausage. Melt a little into grits. Or spread some on toast and call it breakfast. We don’t need to police breakfast.

One Spread. A Lot of Possibilities.

That’s really what we love about a good cheese spread. It doesn’t need an occasion. It can be dressed up on a beautiful charcuterie board for a party one evening and end up melting over a baked potato the next. It can go to a tailgate, sit on the counter while friends gather in the kitchen, turn into lunch, or rescue the question of what on earth are we having for dinner?

Of course, you can always just grab a cracker and eat it straight from the bowl.
